METHI ALOO PARATHA FROM LEFTOVER SABJI /NO STUFF PARATHAS

Aloo sabzi is one of the most prepared dishes in our Indian kitchens. However, there are days when you just don’t feel like having the leftover sabzis with chapati or roti . You can turn your leftover aloo sabzi into delicious and quick no stuffing parathas which taste yummm.

Many leftover vegetable bhajies can be used as stuffing to make delicious these no stuffing  parathas 

Aloo methi ki sabji

INGREDIENTS

  • Leftover methi sabji or any dry sabjis -3 cups
  • Wheat flour – 2 cup or finely chopped coriander leaves – ¼ cup as needed
  • Ajwain – ¼ tsp
  • Chaat masala – ¼ tsp
  • Amchur masala – 1/4 tsp
  • Kasoori methi crushed – 1 tsp
  • Salt as needed
  • Chilli pwdr – ¼ tsp
  • finely chopped coriander leaves – ¼ cup

PREPARATION

METHOD

Take the leftover sabji in a mixing bowl / plate  , pick and discard if any whole spices or curry leaves if you have added in your sabji .

Using a masher mash the sabji well, see that the aloo gets mashed well , so that it becomes easy to roll .

 Now add the ajwain , chaat masala , red chilli pwdr , kasoori methi ,coriander leaves and  very little salt .Give a nice mix.

Now gradually add the wheat flour into the mashed sabji and start mixing . Don’t add water ,as there will be enuf moisture in the sabji .

Once it becomes like a dough , start kneading into soft paratha dough .

If the dough is dry and you are not able to knead ,then may be sprinkle little water OR may be wet your hands  and knead .

Divide the dough into big balls.

Roll it into circles with the thickness you want.

Both thin and thick taste nice .

Fry it on a hot tava by applying ghee or oil on both the sides till brown spots appear.

Fry on medium flame.[ you can see the paratha puffing up ]

Serve hot with any dip, green chutney , peanut chutney pwdr ,sauce , curd + pickle ,non-veg gravies.

NOTE

  1. You can use any leftover sabjis like methi sabji / palak sabji / cabbage / cauliflower / matar /egg burji / paneer burji / carrot / dal etc.
  2. You can add any spices of your choice .
  3. Mash the sabji well.
  4. Any other spice you like – amchur pwder + jeera pwdr + garam masala can be added .
