Prawns curry recipe
PRAWNS COOKED IN COCONUT MILK
INGREDIENTS
- Prawns – 250 gms
- Onion finely chopped – 1
- Tomato finely chopped– 2 small
- Ginger garlic paste – 1 tsp
- Green chilli – 1 sliced
- Chilli pwdr – 2 tsp or as per taste
- Coriander pwdr — 3 tsp
- Turmeric pwdr – ½ tsp
- Tamarind – gooseberry size or as per the sourness you want
- Coconut milk – 1 ½ cup
- Curry leaves – few
- Oil – 1 tbsp
- Mustard seeds – 1 tsp
- Fenugreek seeds – ¼ tsp
- Salt as per taste
METHOD
Clean the prawns by removing the shell and veins. Wash it well .Marinate it with little salt and turmeric pwdr and keep aside for marination.
Soak the tamarind in ½ cup of warm or hot water and extract the juice . [microwave for 30 sec]
Heat oil , add mustard seed and allow it to crackle .
Add fenugreek seeds and fry for few seconds .[ don’t burn it ]
Add onion + curry leaves + green chilli and fry till transparent .
Add ginger garlic paste and fry till raw smell leaves.
Add tomatoes and fry till it becomes mushy and oil separates.
Add turmeric + chilli pwdr + coriander pwdr + salt and fry till raw smell leaves.
Add the marinated prawns and fry for 1 min till the prawns curl up.
Add tamarind juice + ½ cup water and cook for 2 minutes .
Add the coconut milk and cook for 5 minutes till the gravy becomes thick .
Garnish with curry leaves or coriander leaves.
NOTES
- Adjust water and coconut milk as per the consistency you want thick or thin.
- Soak the tamarind in hot water for sometime and then extract the juice.
- Add masalas as per your taste.
- Why not add ½ tsp garam masala.
- Non veg taste better , when spicy.
- I have made paste of onion + tomato + ginger garlic paste.
- Instead of regular onions try shallots for more taste.
- You can reduce tamarind and add raw mangoes.
- You can also add nay veges like potato or drumstick.
- Add 3 – 4 big green chilli whole .
- You can fry the prawns and add.
- Use coconut oil for more flavour.
