Andhra style brinjal in spicy onion masala
BRINJAL IN SPICY ONION MASALA / VANAKAYA ULLI KARAM

INGREDIENTS
- Small brinjals 1/2 kg (cut into 4 pieces lengthwise)
- 3 big onions
- 5 – 6 cloves of garlic
- smaLl piece of ginger
- 1 teaspoon jeera
- 1 teaspoon dhania powder
- 2 – 3 green chillies
- salt
- 1/2 tsp red chilly powder as per taste
- 1/2 tsp turmeric powder
- oil 2 or 3 tbsp
METHOD
In a mixer jar add cut onions, garlic, ginger, jeera, dhania powder, green chillies.
Grind it into coarse paste
Heat a non-stick pan with oil and add the pieces of brinjals.
Fry it on high flame for 5 minutes .
Add haldi and masala paste reduce the flame and fry the brinjal and masala together for another 8 to 10 minutes,
Stir and roast till the raw onion smell vanishes and you get a nice dark brown colour and but do not burn it.
Add salt and cover for 2 – 3 minutes, by this the brinjals will get cooked properly and the masala will get coated on the brinjals.
Now add chilly powder, mix it well, make sure that the masala is fried well.
Serve hot with rice or roti
NOTES
- Cooking time depends on the type of brinjals and the size of the pieces .
- Adjust masalas as per taste .
- While grinding the masala we can add tamarind and jaggery also fpor a variation in f;lavour .
- Instead of green chillies we can use red chilli.
