Baby potato recipe
BABY POTATO DRY MASALA FRY
INGREDIENT
- Baby potatoes – ½ kg
- Chilli pwdr -1 tsp or as per taste [ I have added less ]
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 2tsp
- Garam masala pwdr – ½ tsp
- Asafoetida – a generous pinch
- Chaat masala – ¼ tsp
- Amchur pwdr – ¼ tsp
- Oil – 1 tbsp
- Salt as per taste
METHOD
Wash the potatoes well and pressure cook it [ 1 or 2 whistles]
Peel the cooked potatoes.
Using a toothprick or fork prick it carefully.[so that the masalas can penetrate in]
Take all the dry ingredients in plate chilli pwdr + turmeric + salt + coriander pwdr + asafoetida+ garam masala and mix it well.
Add this mixture to the potatoes and mix well gently.
Heat oil a nonstick pan .
Add the jeera and allow it to crackle.
Add the potatoes and stir well so that it gets evenly coated with the oil.
Cover and cook on low flame till the potatoes get crispy from outside.
Add the amchur and chaat masala and mix well.
Garnish with finely chopped coriander leaves.
VARIATION – You can add a coarse pwdr of saunf + mustard seed and fenugreek seed.
NOTES
- Quantity of masala can be adjusted as per your taste.
- Saunf gives a nice flavour.
- For me the potatoes were cooked in 1 whistle as they were small.
- Don’t over cook the potatoes.Be careful while pressure cooking the potatoes.
- Be careful while stirring , the potatoes should not break
- After adding the masala pwdr you can keep aside for sometime.
- You can also add curd.
- You can also add onion and tomatoes.
- You can also add kasoori methi or powder.
