BEANS AND POTATO STIR FRY
Poṟiyal tamil word for a fried, or sometimes sauteed, vegetable dish. The Kannada word for the same dish is Palya and in Telugu, it is Vepudu. It is usually made by shallow frying shredded or diced veges along with spices. The preparation would normally involve frying rai , urad dal , onions and then the main vegetable, and finally adding turmeric , various spices, dried red chillis and coriander . In tamil nadu , shredded coconut would be added as a dressing.
Poṟiyal serves as a side dish to a three-course meal of rice with sambar ,rasam and curd
Poriyal is the South Indian equivalent of a quick, dry stir-fry; a side dish intended to complement rice dishes. It’s easy to make and an ideal way to cook vegetables
A poriyal can made with any vegetable and is served as a side dish for lunch for dinner with rice and some curry. This dish is mixture of all vegetables cooked and tossed with fresh coconut .
INGREDIENTS
- Beans – 150 gms
- Potato small cubes – 1
- Onion chopped – 1
- Mustard seeds + urad dal – 2 tsp
- Green Chilli chopped – 3 or as per taste
- Turmeric pwdr – ¼ tsp
- Asafoetida – a pinch
- Curry leaves – few
- Oil – ½ or 1 tbsp
- Freshly grated coconut – few tbsp
- Salt as per taste
PREPARATION
- Wash and dry the beans. Remove the strings ,chop it small.
- Peel the potato and chop it into small cubes It has to be small as both have to be cooked together .
METHOD
Heat oil in a pan.
Add mustard + urad dal and let it splutter.
Add onion + green chilli + asafoetida and fry till onions turn translucent.
Add potato and stir fry for a minute .
Add chopped beans + turmeric pwdr + salt and mix well.
Add few tbsp of water , mix well and cover it.
Cook on low lame till the beans become soft .
Give a stir , drizzle little water if required and cook till it is done.[ when oil separates a bit]
Press the potato and check if it is cooked .
**** Now here you can add 1/2 tsp of coriander powder or sambar masala and mix well.
Once done , add grated coconut , mix well and off the flame.
Serve as side dish for chappati and rice .
NOTES
- Together instead of potato , with the onion you can also add cooked moong dal or cooked chana dal. [not mushy]
- Keep stirring in between and add water if required.
- You can also add ½ tsp of coriander pwdr.
- You can also add little sambar pwdr.
- You can steam the beans first and then temper it.
- You can also cook in the cooker upto 2 whistles.
- The beans should not become very soft ,it should have the crunch texture.
- Y not add scrambled egg in the end .
