BEANS CARROT PORIYAL / BEANS CARROT STIR FRY / BEANS CARROT THORAN

Beans carrot stir fry recipe

INGREDIENTS

  • Carrots finely chopped – ½ cup
  • Beans chopped – 1 cup
  • Finely chopped onion – 1
  • Green chill chopped – 2 or as per taste
  • Oil – 2 or 3 tsp
  • Mustard seeds + urad dal – 1 tsp
  • Curry leaves – few
  • Freshly grated coconut 3 or 4 tbsp
  • Salt to taste

NOTEyou can take both the veges in same quantity .I have added less carrot ,so that it doesn’t sweet .

Chop  the veges finely .

PREPARATION

  1. Wash and dry the beans. Remove the strings ,chop it finely .
  2. Peel the carrot and chop it finely.

METHOD

Heat oil in a pan.

Add mustard + urad dal and let it splutter.

Add onion + green chilli + curry leaves and fry till onions turn translucent.

Add chopped beans +  carrot + salt and mix well.

Stir fry for a minute .

Sprinkle 2 or 3  tbsp of water , mix well and cover it.

Cook on medium low lame till the veges become soft .

*Don’t overcook .It should be firm and cooked. The veges should not become very soft ,it should have the crunch texture.

Add grated coconut , mix well and off the flame.

*Don’t cook after adding coconut .

Serve as side dish for chapati and rice .

Goes well with rice + sambar / rasam

NOTES

  1. Together with the onion you can also add cooked moong dal or cooked chana dal. [ not mushy ]
  2. Keep stirring in between and sprinkle water if required.
  3. You can also add ½ tsp of coriander pwdr / sambar pwdr towards the end .
  4. You can make a combination with beans + potato also  .
  5. You can steam the beans first and then temper it.
  6. You can also add scrambled egg in the end .
