Bell pepper salad recipe
BELL PEPPER SALAD RECIPE
INGREDIENTS
- Red bell pepper – ½ cup
- Yellow bell pepper – ½ cup
- Green capsicum – ½ cup
- Broccoli florets – ¼ cup
- Paneer or tofu – 1/4 cup
- Cheese – 2 cubes
- Chilli flakes as per taste
- Salt as per taste
- Pepper pwdr – ¼ tsp
- Vinegar or lime juice few drops
- Light virgin oil – 1 tbsp
- Finely chopped coriander leaves – 2 tbsp
- Mixed herbs or oregano
PREPARATION
Finely chop the bell peppers.
Chop the broccoli into small pieces.
Either chop or grate the cheese and paneer.[ I have chopped them into small cubes]
METHOD
Take all the above ingredients in a big bowl.
Toss an mix them well.
Cover and refrigerate for an hour before serving.
NOTES
- You can add more ingredients like orange bell pepper ,onion, basil leaves, parsley, olive, boiled corn, stir fried mushroom etc etc
- You can cut the veges into strips.
- You can first roast all the 3 bell peppers directly over the fire until blackened on all sides, Peel the the charred skin and then chop or slice it.
- I kept the veges size small as I wanted my kids to eat it.
- You can prepare it a day before also.
- Don’t mix the salad with hands either toss it or use fork.
- You can use any cheese of your choice.
