Broccoli soup recipe

INGREDIENTS

  • Broccoli florets– 2- 3 cup
  • Garlic – 2 or 3 clove
  • Onion – 1 small chopped
  • Pepper powder – as per taste
  • Butter – 1 tbsp [or less]
  • Olive oil or regular oil – 1/4 tsp
  • Milk – ½ cup
  • Corn flour – 1 tbsp
  • Salt – as per taste
  • Water – as per the consistency you want [instead of plain water use stock ]
  • Fresh cream – 1 tbsp [optional]
  • Grated cheese – 1 cube [optional]
  • Mixed herb pwdr or oregano – ¼ tsp [optional]
  • Amul fresh cream – for garnishing.

METHOD

Take a pan and heat butter + oil.

Add onion and garlic and saute till light golden brown.[dont burn]

Add the broccoli  and saute for 2-3 minutes.[the colour should not change ,fry on low flame]

Remove from flame and allow it to cool.

Blend or grind it to a fine sauce by adding 2 cup water. [add water as per the consistency you want]

Strain it.

Take a sauce pan, add the broccoli sauce and cook for a minute by stirring.

Mix well the cornflour + fresh cream + milk [see that there are no lumps].

Add this mixture to the broccoli and cook for 2 minutes .

Keep stirring.

Add the salt + mixed herb pwdr  and pepper powder and cook for 1min.

Add grated cheese ,mix well till cheeses melts .

Off the flame.

Garnish with fresh cream and serve hot with garlic bread.

NOTES

Soak the broccoli florets in salted water for sometime.

Instead of plain water use stock made from maggi cubes. Boil water + cubes.

Reserve few fried broccoli for garnish.
