Chicken manchurian dry
CHICKEN MANCHURIAN DRY
INGREDIENTS
- Boneless chicken – 200 gms [clean washed and chopped into small cubes ]
- Pepper pwdr – 1 tsp
- Cornflour – 1 tbsp
- Maida – 1 tbsp
- Rice flour – 1 tbsp [ optional ]
- Oil – 1 tbsp [ preferably olive oil ]
- Oil to deep fry the chicken
- Finely chopped onion of spring onion or regular onion – 2 tbsp
- Ginger and garlic finely chopped – ½ tbsp
- Green chilli chopped – 1
- Tomato ketchup – 1 tbsp
- Soya sauce – 1 tsp
- Vinegar – ½ tsp
- Chilli sauce – tsp
- Sugar – 1 tsp
- Salt to taste
- Corn flour – 1 tbsp mixed with ¼ cup water
- Finely chopped spring onion greens for garnish
- For marination – 1 tsp ginger garlic paste + 1 tsp pepper pwdr + ½ tsp soya sauce + little vinegar .
PREPARATION
- Marinate the chicken with pepper pwdr + 1 tsp ginger garlic paste + ½ tsp soya sauce + vinegar + salt for 2 -3 hrs or overnight. [ you can avoid ginger garlic paste while marinating ]
- Heat oil in a pan for deep fry .
- Add the corn flour + maida + rice flour in the chicken and mix well. [over here you can also add 1 beaten egg ]
- Deep fry the chicken till crisp and golden on medium flame . Drain and keep aside . [ the chicken should be cooked ]
METHOD
Heat oil in a pan, add finely chopped ginger + garlic and fry for few seconds.[ colour should not change , also it should burn ]
Add onion + green chilli and fry for few seconds .
Add the chicken and mix well.
Add the sauces – chilli sauce + vinegar + ketchup + soya sauce + salt . [ Be careful while adding salt as soya tastes salty ]
Add the cornflour mixture [ cornflour mixed with water ] and mix well .*** [ here if you want very dry then omit the cornflour mixture ,just mix it well with sauce mixture]
Lower the flame and cook for sometimes till you get a shiny look .[ the rawness of cornflour has to go ]
Finally garnish with spring onion greens.
Ready to serve with fried rice or noodles or just a starter .
NOTES .
- I chopped the chicken into small cubes to reduce cooking time.
- You can also add fried cubed onion and capsicum.
- You can add 1 egg to the chicken before frying it .
- This dish has to be dry, so don’t add water.
- Instead of deep fry you can do shallow fry .
- Ajinomotto enhances the flavour of Chinese cuisines .
- Always keep everything ready before you start cooking chinese recipes .
- Be careful while adding soya sauce ,too much of it will change the colour to black and will also spoil the taste.
