DODHA BARFI RECIPE

DODHA BARFI  RECIPE / TODA BURFI / SPROUTED WHEAT FUDGE / PUNJABI  MILK FUDGE

A yummy milk and sprouted wheat fudge .

This dodha barfi recipe is a must try for everyone who loves sweet treats. With its soft and grainy texture, this Punjabi dodha or doda barfi recipe will please your taste buds with every bite. Prepared using sprouted wheat , milk, liquid glucose, sugar, ghee .

This is a traditional but easy recipe for dodha barfi that you can make for your loved ones on special occasions and festivals.

INGREDIENTS

  • 1/2 cup – germinated wheat
  • 2 tbsp – curd
  • 1 litre – full fat milk
  • 1 tbsp vinegar mixed with 1 tbsp water
  • 100 gm – sugar/ jaggery
  • 1 tbsp cocoa powder
  • 2 pinch red food colour
  • 1 tbsp liquid glucose (optional for glaze and to keep it moist )
  • 2 tbsp – ghee
  • 2 tbsp – finely chopped cashews
  • 3 tbsp – grated dried coconut
  • 1/2 tsp – cardamom powder
  • Dry fruits thinly sliced  for garnish
  • Grease tin / tray with ghee

METHOD [ the whole process can be done on medium to high flame. if cooking on high flame then don’t leave unatttended . Keep stirring continously ]

Clean , wash , rinse and soak the wheat over night .

Drain the excess water.

Wrap it in a damp cloth .and keep it to germinate in colander. [ maintain the dampness of cloth if it dries ]

 It may take 1 or 2 days.For me it took 36 hrs .

Blend the germinated wheat into a coarse mixture . [ don’t add water .] If you dont want grainy texture then you can add 1 tbsp milk and grind into fine paste .

Take milk + curd + wheat mixture in a thick bottom pan .

 Stir and cook on medium flame .

When the milk comes to aboil , add the vinegar mixture little by little .

The milk will start curdling.

Keep stirring and cook till the milk reduces to half.

 Make a mixture  of cocoa powder + red food colour + 2 tbsp water and mix well.

Add the cocoa powder mixture and mix well.

Add jaggery / sugar and mix well.

Stir and cook till the mixture thickens like mava .

Add liquid glucose and mix well .

Add dry coconut and cashew + cardamom powder and give a mix .

Add ghee and mix.

The mixture will become grainy in texture  and dark in colour.

Transfer to the greased tin / tray and let it set for few hrs.

Once it sets, slice it and serve .

NOTE – Instead of sprouted wheat we can try it with broken wheat [ dalia ]

Roast ½ cup broken wheat in 1 tsp ghee .Soak it in 1 cup boiling hot water for 30 mins .

Now take this with milk and follow the above recipe.
