Eggless monginis vanilla slice cake
EGGLESS MONGINIS VANILLA SLICE CAKE

INGREDIENTS
- Maida – 1 ¼ cup
- Fresh thick curd at room temperature – 1 cup
- Oil without smell and colour – ½ cup
- Sugar – ¾ cup
- Baking soda – ½ tsp
- Baking pwdr – 1 ¼ tsp
- Vanilla essence – 1 ½ tsp
PREPARATION

Sieve maida flour twice and keep aside.
Take sugar in mixie jar and grind into fine pwdr .
Add curd and blend .
Now add baking pwdr and baking soda and blend again .
Cover and keep aside for 7 to 8 mins .
Meanwhile preheat the oven at 180 * C convection mode and grease the tins.
*Lay a butter paper also in the tin at the bottom .
Check the curd mixture it would have risen [ doubled ] well.
Transfer this to a big bowl .
Add oil and essence ,give a mix.
Now slowly add the flour and mix well.
See that there are no lumps .
Pour the batter in the tin and tap it gently .
Bake the cake for 35 to 40 mins at 180 * C.
Test after 30 minutes by inserting a tooth pick , if it comes clean off it or bake it for more time.
Once done allow it to cool for 10 mins.
Run a knife around the edges of the tin to loosen the cake.
Cake is ready to serve .
Slice the cake only when it cools completely.
Either decorate with frosting or icing.
For cup cake cakes bake at same temperature for 20 mins. I baked it together ,after 20 mins removed the cup cake.
FOR CHOCOLATE CAKE – Replace 2 tbsp flour with 2 tbsp unsweetened cocoa pwdr .
