Lemon sevai
LEMON SEVAI
INGREDIENTS
- Cooked sevai or idiappam crumbled – 2 cup
- Lemon juice of 1 lemon or as per your taste
- Oil + ghee – 1 tbsp
- Mustard seeds + chana dal + urad dal – 1 ½ tsp
- Curry leaves – few
- Red chilli – 1 broken
- Green chilli – 1 chopped
- Asafoetida – a pinch
- Cashew nuts fried – few [ broken ]
- Grated ginger – 1/2 tsp
- Turmeric pwdr – ¼ tsp
- Finely chopped coriander leaves for garnish
PREPARATION
Prepare idiappam following this recipe : – Idiyappam recipe or ragi sevai after preparing ,allow it to cool and loosen it .
OR
Use bambino or concord rice vermicelli or anil semiya
METHOD
Heat oil + ghee in a pan , add mustard seeds + urad dal and fry till the dals turn light brown on medium flame.
Add green chilli + grated ginger + curry leaves + turmeric + asafoetida and saute for few secs.
Adjust salt .
Add the cooked sevai and mix well till it gets coated completely coated with the tempering .
Drizzle the lemon juice , give a quick stir and off the flame .
Garnish with cashew and coriander leaves .
Serve with coconut chutney .
NOTES
- You can also add peanuts or chana dal.
- Finally you can also garnish with freshly grated coconut .
- After adding lemon juice off the flame immediately .
- It tastes same like lemon rice.
