Monginis eggless dark chocolate cake
EGGLESS DARK CHOCOLATE CAKE
INGREDIENTS
- Maida / all purpose flour – 1 cup
- Baking pwdr – ½ tsp
- Baking soda – 1 tsp
- Unsweetened cocoa pwdr – 6 tbsp
- Granulated sugar – ¾ cup [ powder it finely ]
- Oil – ½ cup [odourless and colourless ]
- Hot coffee – ¼ cup [1 tsp of nescafe pwdr + ¼ cup hot water ]
- Milk – ¼ cup [room temp ]
- Curd – ¼ cup [ room temp & beaten well ]
- Vanilla essence – 1 tsp
PREPARATION
- Before you start keep all ingredients ready.
- Grease and dust a 8 inch baking pan .
- Preheat the oven at 180 *.
METHOD
Sieve twice maida + cocoa pwdr + baking pwdr + baking soda + sugar pwdr ,mix well and make a dry mixture.
Transfer it to a mixing bowl .
Beat curd + oil + vanilla essence + hot coffee + milk and mix well. [you can use a beater or blender or mixer ]
Now slowly add the wet mixture to the dry mixture little by little and mix well with a fork or a spatula. [ no blender pls – you should not beat the cake batter ]
Mix it to a lump free batter. [don’t over mix it ]
Pour the batter in the greased pan ,spread it evenly and tap it .
Bake it at 180* for 30 – 35 minutes or till the toothpick comes out clean or with few moist crumbles. [Check after 25 mins – baking time depends on the size of the tin also ]
Once done allow the cake to cool down for sometime.
Now run a knife around the edge of the pan to loosen the cake.
Carefully remove the cake and allow it to cool.
Ready to serve.

NOTES
- I have baked in convection mode , you can try the recipe in cooker , pan or kadai . For this you can refer to my below recipes on cake .
- The oil we use should have no smell or colour.
