PANI PURI / GOLGAPPAS /PUCHKAS
INGREDIENTS
- Pani puri ka puri as required [20 or 30 ]
- Ragda stuffing or any other stuffing
- Sweet chutney
- Theeki pani

RAGDA STUFFING
INGREDIENTS
- White peas – 2 cup
- Salt as needed
- Chaat masala
METHOD
Soak the peas overnight and pressure cook with salt upto 3 whistles till soft . [not mushy ]
Drain the excess water .Sprinkle little chaat masala and mix it .

- INSTANT SWEET CHUTNEY – Instant amchur ki chutney
THEEKI PAANI OR PANI PURI KA PAANI
INGREDIENTS
- Mint leaves – ½ cup
- Coriander leaves – ¼ cup
- Green chilli – 1 or as per taste
- Ginger – a small piece [ 1 inch ]
- Lemon juice – ½ lemon
- Roasted jeera pwdr – ½ tsp
- Roasted coriander seeds pwdr – ½ tsp
- Black pepper pwdr – ½ tsp
- Kala namak – 1 tsp [ must ]
- Chaat masala – ½ tsp
- Chilled water as required [ 2 – 3 cup ]
- Salt as per taste [ be careful as we are adding kala namak and chaat masala ]
METHOD
Clean , wash and pat dry the leaves .
Grind it with green chilli + ginger to a fine paste. If required add little water .
Add the chilled water ,mix well and strain if required .
Mix in all the other spices to this water .
Store it in fridge .
ASSEMBLING THE PANI PURIS AND SERVING
Keep everything ready before you start serving .
Take a puri , make a hole on top with your thumb , stuff in a spoon of ragda mixture ,add little sweet chutney, stir the teekhi paani and pour in . Serve immediately or it will turn soggy .
Once you finish the pani puri its time for sukkhi puri that is – stuff the puri with ragda or mashed potato , sprinkle little chaat masala and top it with fine nylon sev .
VARIATION AND NOTES
- For theeki paani I use Everest pani puri masala and follow the instructions on it.
- Instead of making sweet chutney separately ,you can add powdered jaggery + tamarind pulp to the teekhi paani.
- I make sweet chutney separately as my kids love it.
- You can also add few boondis to the teekhi paani .
- You can add crushed garlic to the teekhi paani for garlic flavour pani.
- You can also try jal jeera instead of teekhi paani.
- To get a kick out of your pani puri ,you can add little vodaka while serving .
YOU CAN USE DIFFERENT STUFFING
- Boondi – soak the boondi for few minutes in water ,drain and sqeeze the excess water .
- Kala chana [soaked and pressure cooked + boiled potatoes mixed with chaat masala + onion
- Steamed Moong sprouts or mixed sprouts.
- Boiled potato + finely chopped onion.
- ALOO STUFFING . Boiled , peeled and smashed Aloo . Add salt , Red chilly powder , green chilly paste , coriander leaves . Mix all the ingredients
Pani puri in 8 flavors
GARLIC PANI . Garlic pods , Chilly powder , Black salt , Salt , water , blend and dilute , adjust to your taste
HING PANI . Hing , Black salt , Tamrind extract, chat masala ,Salt blend and dilute , adjust to your taste
JEERA PANI . Roasted cumin powder , Black salt, Chat masala , Lemon drops , salt dilute and adjust to your taste
CORIANDER PANI . Coriander leaves , Green chilly , Black salt , lemon , salt , blend to a paste and dilute , adjust to your taste
GINGER PANI . Ginger paste , Jaggery , tamarind extract , Red chilly powder , Salt, chat masala , blend and dilute and adjust to your taste
MINT PANI . Mint leaves , Jeera powder , green chillies , Black salt , lemon drops , salt , blend and dilute and adjust to your taste
LEMON PANI . Chat masala , Cumin powder , Black pepper powder , Black salt , Salt and lemon drops, dilute and adjust to your taste
TAMARIND PANI . Tamarind extract, Chat masala , Salt, Cumin powder , dilute and adjust to your taste
CHOCOLATE PANI PURI RECIPE
Ingredients : Pani Poori ki poori :5-6
MELTED Chocolate sauce (I use Cadbury diary milk with little butter ) OR FOLLOW -https://maryzkitchen.com/chocolate-making/
Ice cream as per YOUR choice (I use vanilla ice-cream )
Chocolate sprinklers: as per ur choice
Grated chocolate for garnish
Recipe : Make hole in puris , dip it in chocolate sauce ,swirl and remove excess chocolate .keep aside to set. Fill with any ice cream . Garnish with sprinklers n grated chocolate /choco chips . Serve chill…
