Ragi bhakri recipe

                                 MAHARASHTRIAN STYLE NACHNI BHAKRI / RAGI BHAKRI / NACHNI ROTI RECIPE

Ragi comprises a vast array of key nutrients like vitamin C, VITAMIN E , B-complex vitamins, iron, calcium, antioxidants, proteins, fibers, sufficient calories and useful unsaturated fats. Following a deep sleep at night, the stomach and intestines display peak levels of metabolism in the morning. Hence, having ragi-based foods like ragi upma or ragi parathas for breakfast activates the digestive juices and ensures complete assimilation of nutrients found in ragi, which are absorbed into the bloodstream and transferred to vital organs in the body namely the heart, brain, lungs, liver and kidneys.

INGREDIENTS

  • Ragi flour – 1 cup
  • Rice flour – ¼ cup [ OPTIONAL ]
  • Hot water – 2 cup
  • Oil – 1 tsp
  • Salt as per taste
  • Dry rice flour for dusting

PREPARATION

Boil the water.

METHOD [Water quantity depends on the quality of flour ]

Take roasted ragi flour + rice flour + salt in a plate .

Slowly add the hot water and mix well with a wooden spatula.

Once you are able to handle the hot dough start kneading it .

Add the oil and knead it into a soft dough.

Divide the dough into equal portions.

Roll into balls.

Take one ball and flatten it in between the palms.

Dip it in rice flour ,dust the rolling board also with rice flour.

Place the flatten dough on it and start patting it using your clean palms as shown in the video.

Pat it into thin or medium bhakris.

Place it on a hot tava.

Apply few drops of water on the top of the bhakri with your hands as shown in the video.

Let it roast for sometime.

Flip the bhakri and cook on other side.

Using a cloth or spatula apply pressure on the edges to allow the bhakri to puff.

Once done remove it.

Serve hot with veg  / non veg gravies or any chutnies.

NOTES

  1. For ragi chapatti you have to take a combination of ragi and wheat flour.
  2. Roasting the flour removes the stickiness of the flour.
  3. Because I roasted the flour , I am able to make thin bhakris.
  4. Its difficult to roll it with rolling pins , so we have to pat it.
