RAMASSERY IDLI
THE RAMASSERY IDLI is known for its soft and fluffy texture . These idlis were described as a cross between dosa and idli .
People who belonged to Mudaliar community migrated from Kanchipuram [ Tamil Nadu ] to Ramasssery in Palakkad in search of job.They started making idlis first , for those who worked in paddy fields.
Ramassery became famous among food lovers, because of these unique Idlis .This village lying about 8 km from Palakkad, Ramassery is known for its exceptional Idlis (steamed rice cake) that are different in size, shape, and taste from the common variety. Almost shaped like a Dosa, these round and flat idlis are soft and delicious that has attracted many .
Ramassery Idli Kada (Sree Saraswathy Tea Stall) is the best place to have Ramassery Idli and is served with sambar and coconut chutney.
UNIQUE POT USED FOR STEAMING THESE IDLIS – Mouth of a earthern pot tied , tightly with a special type of string called as idli string. Leaves of Plashu tree was placed on top of the string , batter was poured over this leaf and steamed..These idlis are thinner than regular idlis .after steaming they got the marks of the leaves on it .It took hardly 3 to 5 mins to steam these idlis .As time passed leaves were replaced by cloth .
Here in this recipe of RAMASSERY IDLI ,we have given our variation of how we can steam idlis without a idli vessel. Any idli batter can be used .Result will be same – soft and fluffy thin idlis .
