SIMPLE DRUMSTICK PORIYAL / SIMPLE DRUMSTICK STIR FRY

INGREDIENTS

  • 3 Drumstick , cut into 3 inch pieces
  • 1/4 cup freshly grated coconut 
  • 2 Green Chillies , slit
  • 1 sprig Curry leaves
  • ½ tsp Mustard seeds
  • ½ tsp urad dal
  • 2 tsp Coconut Oil / regular oil
  • Salt to taste
  • Water as needed

METHOD

Wash the drumsticks well and peel them by removing the tough green part. Cut them in 3 inches length. I have slit the drumstick into 2 – you can keep it whole.

Drumsticks should be fresh, thick (pulpy inside). Don’t buy long & slim looking drumsticks that have less pulp.

Take a cup of water in a pan +  drumsticks + salt.

Cook it for 8 – 10 minutes. Be careful not to overcook the drumsticks. It should be tender but not mushy .

Drain the water and keep aside.

Heat oil in apan .

Add the mustard seeds + urad dal , let it crackle.

Then add the slit chillies + curry leaves and give a stir .

 Add the  drumsticks and stir fry for a min .

 Add the grated coconut , give a nice stir and off the flame .

Serve Murungakkai Poriyal along with rice + any gravy [ dal / sambar etc ]
