Veg sweetcorn soup recipe
VEG SWEET CORN SOUP RECIPE
INGREDIENTS
- Sweet corn kernels – ½ cup [cooked]
- Blended or crushed sweet corn kernels – ½ cup
- Finely chopped veges – ¼ cup [carrot, beans ]
- Water – 4 cup [use vegetable stock instead of plain water]
- Cornflour – 2 ½ tbsp mixed with ½ cup water
- Sugar – ½ tsp
- White Pepper pwdr – as per taste
- Salt as per taste
- Soya sauce
- Vinegar
- Chilli sauce
METHOD
Boil the water in a pan .
Add the veges and cook for 3-4 mins .
Add the cooked whole corn.
Add the blended or crushed corn and cook for 2-3 mins
Adjust salt + pepper pwdr and sugar.
Add the cornflour paste and simmer for sometime till the soup thickens.
Serve hot with soya sauce + vinegar + chilli sauce as per your taste.
CHICKEN SWEETCORN SOUP –
Add shredded boiled chicken instead of veges .
When the soup is boiling slowly add beaten egg and stir it in one direction on low flame till the egg forms into thin threads.[instead of veg stock use chicken stock]
Add the egg after the cornflour paste is added.
NOTES
Let the veges be crunchy, don’t overcook.
You can garnish with spring onion greens.
Use vege of your choice like mushroom , cauliflower, cabbage.
Add water according to the consistency you want.
Adjust cornflour as per the thickness you want.[ more cornflour thickens the soup so be careful while adding]
You can used tinned corn.
You can prepare the stock at home by boiling mixed veges or use maggi veg cubes.
You can use ajinomoto.
