White mutton korma recipe

Goat meat is a great source of protein that is easily found for non vegetarians .

Not only is it a rich source of high-quality protein, but it is also an outstanding source of many vitamins and minerals, including iron, zinc, and vitamin B12. Because of this, regular consumption of lamb may promote muscle growth, maintenance, and performance. In addition, it helps prevent anemia

There is vitamin B in goat meat, which helps burn fat in your body. In addition, it is also high in protein, and lower in saturated fat .

BENEFITS OF GOAT MEAT

  1. Goat meat consumption may lower the risk of a person suspected to have inflammation in blood vessels, and stabilize the heartbeat. Because it is advisable occasionally coronary heart disease eat goat meat, but stay away from the fat.
  2. There are selenium and chlorine in goat meat which is beneficial to prevent cancer.
  3. Pregnant women are also benefitted because it prevents anemia, give intake to hemoglobin, and helps blood circulation. Although many pregnant women are afraid to eat goat, but actually goat meat even prevent birth defects, as long cooked with good maturity level.
  4. For women who are menstruating, goat meat helps prevent anemia.
  5. Food from goat meat help keep from stress and depression because many contain B12.
  6. There is omega 3 fatty acid in the meat, and well consumed by children with autism.
  7. Low potassium and sodium, useful to control blood pressure, and prevent stroke and kidney disease.
  8. Calcium contained by goat meat is also good for bones.
White mutton korma recipe

INGREDIENTS:

  • 500 g mutton
  • 1 tsp salt
  • 11/2 tbsp ginger and garlic paste
  • 1/2 cup yogurt
  • 1 tsp pepper powder
  • 2 onions finely chopped
  • 4 or as per taste green chilli – slit
  • 8 almonds
  • 8 cashews
  • ¼ cup cream or malai
  • ¼ cup milk
  • whole garam masala – [ 2 cloves ,2 green cardamom 1 inch cinnamon , 7 pepper corn ,1 bay leaf }
  • 3 or 4 tbsp oil
  • 1 tsp kasoori methi
  • 2 or 3 tsp lemon juice

PREPARATION  

  1. Cut , clean , wash and soak the meat for 5 to 10 mins .[ this is to remove excess bold from the mmeat , which gives a smell .
  2. Rinse well and drain off the excess water .
  3. Transfer to a bowl , add ginger garlic paste + salt + pepper pwd + curd and mix well.
  4. Refrigerate for few hours or overnight for marination.*more the marination time , better the taste and texture of meat .
  5. Soak the almonds and cashews separetly for few hrs in hot water . Peel the almonds.
  6. Transfer the alond + cashew and grind . now add fresh cream + milk and grind into fine paste .

METHOD

Heat oil in a cooker .

Add whole garam masala and give a nice stir.

Add onion + green chilli and mix well.

Stir fry till translucent .

Add the marinated meat and mix well.

Stir and cook for 5 mins on high flame .

Add  ½ or 1 cup water and give a mix .

[ adjust water as per the consistency you want ]

Pressure cook on high flame upto first whistle .

Now lower the flame to lowest and cook for 10 mins.

*Cooking time depends on the size of the mutton pieces .

Allow the pressure to release .

Give a nice mix.

Add the almond and cashew paste and mix well.

Bring to boil on medium flame .

Add crushed ksoori methi + garam masala pwdr.

Cover partly and cook for 5 mins on medium flame

Add lemon juice , give a nice mix and off the flame.

Also while serving drizzle lemon juice if required .

Serve hot with any Indian bread or rice variety.

I served with pav / salad and kheer .
