Besan sooji ka ladoo
DANEDAAR BESAN KA LADOO /BESAN SOOJI KA LADOO

INGREDIENTS
- Fine sooji – ½ cup
- Besan -1 1/4 cup
- Cardamom pwdr – ½ tsp
- Ghee – ½ cup + 2 tsp
- Sugar – 1 cup
- Dry fruits as required [ almonds / cashew ]
METHOD
Heat 1 tbsp ghee and fry the dry fruits till light golden .
Remove and keep aside .
Add 2 tbsp ghee and add the sooji and fry it on low flame.
Keep stirring.
Colour should not change much .
Just fry till the colour starts changing .
Transfer to a mixing bowl .
Take the remaining ghee and add the besan and fry on low flame .
*First the besan will absorb the ghee and as it gets roasted the ghee will separate and the mixture will become loose .
Stir fry till golden brown for 8 to 10 mins .
*Remember to fry on LOW FLAME
Once done it becomes aromatic.
TIP – Before you off the flame ,just sprinkle 1 tsp water all over ,this is to give grainy texture to the besan .
Now cook for 30 secs .Off the flame .
Transfer to the mixing bowl with sooji .
In the same pan take sugar + 2 tbsp water .
Stir and cook till sugar melts .
Once the sugar melts add 1 tbsp ghee.
Stir and keep cooking .
The mixture will start bubbling .
After sometime it will start hardening .
Off the flame and keep stirring for a minute.the mixture turns into granules and finally turns into powder .
Add the besan and sooji mixture into this.{the mixture should have cooled down completely ,its should not be hot else the sugar will melt .
Now mix all well till they blend together well.
Add the chopped fried nuts and mix .
Start rolling the ladoos of the size you want .
NOTES
Instead of ghee ,we can use any oil without smell.
