BEANS CARROT PORIYAL / BEANS CARROT STIR FRY / BEANS CARROT THORAN
INGREDIENTS
- Carrots finely chopped – ½ cup
- Beans chopped – 1 cup
- Finely chopped onion – 1
- Green chill chopped – 2 or as per taste
- Oil – 2 or 3 tsp
- Mustard seeds + urad dal – 1 tsp
- Curry leaves – few
- Freshly grated coconut 3 or 4 tbsp
- Salt to taste
NOTE – you can take both the veges in same quantity .I have added less carrot ,so that it doesn’t sweet .
Chop the veges finely .
PREPARATION
- Wash and dry the beans. Remove the strings ,chop it finely .
- Peel the carrot and chop it finely.

METHOD
Heat oil in a pan.
Add mustard + urad dal and let it splutter.
Add onion + green chilli + curry leaves and fry till onions turn translucent.
Add chopped beans + carrot + salt and mix well.
Stir fry for a minute .
Sprinkle 2 or 3 tbsp of water , mix well and cover it.
Cook on medium low lame till the veges become soft .
*Don’t overcook .It should be firm and cooked. The veges should not become very soft ,it should have the crunch texture.
Add grated coconut , mix well and off the flame.
*Don’t cook after adding coconut .
Serve as side dish for chapati and rice .
Goes well with rice + sambar / rasam
NOTES
- Together with the onion you can also add cooked moong dal or cooked chana dal. [ not mushy ]
- Keep stirring in between and sprinkle water if required.
- You can also add ½ tsp of coriander pwdr / sambar pwdr towards the end .
- You can make a combination with beans + potato also .
- You can steam the beans first and then temper it.
- You can also add scrambled egg in the end .
