Cluster beans stir fry

CLUSTER BEANS / GAVAR STIR FRY / GUAR BEANS/ SEENI AVARAKKAI PORIYAL/ KOTHAVARANGAI PORIYAL.

Cluster beans / gavar stir fry /guar beans

INGREDIENTS

  • Tender cluster beans chopped – 200 gms
  • Oil – 1/2 tbsp  or 1 tbsp
  • Mustard seeds + urad dal – 1 ½ tsp
  • Onion finely chopped – 1
  • Curry leaves – few
  • Green chilli chopped – 3 or as per taste
  • Turmeric pwdr – ¼ tsp
  • Asafoetida – a pinch
  • Freshly grated coconut – 3 tbsp
  • Salt to taste

PREPARATION

Clean and wash the beans .Trim the head and tail.Remove the string .

Chop it as per the size you want,  I have chopped it finely.

METHOD – 1

Heat oil in a pan.

Add mustard + urad dal and let it splutter.

Add onion + green chilli + asafoetida and fry till onions turn translucent.

Add chopped beans + turmeric pwdr + salt and mix well.

Add few tbsp of water , mix well and cover it.

Cook on low flame till the beans become soft .

Give a stir , drizzle little water if required and cook till it is done.[ when oil separates a bit]

Add grated coconut , mix well and off the flame.

Serve as side dish for chapatti and rice .

METHOD – 2 [ to remove bitterness ]

Cook the beans in water [as required ] + turmeric + salt till soft .[ don’t overcook ,discard the excess water ]

Heat oil in a pan , add mustard seeds + urad dal and let it crackle.

Add onion + curry leaves + chilli + asafoetida and fry till translucent.

Add the cooked beans and stir fry till water evaporates and the beans looks little oily.

Adjust salt.

Finally add the grated coconut and give a stir .

Off the flame and transfer into a serving bowl .

Serve as side dish for chapatti or rice.

NOTES

  1. Together with the onion you can also add cooked moong dal or cooked chana dal [not mushy]
  2. Keep stirring in between and add water if required.
  3. You can also add ½ tsp of coriander pwdr in the end.
  4. You can make a combination with beans + potato or beans + finely chopped
  5. You can also add little sambar pwdr.
  6. Instead of boiling , you can steam the beans first and then temper it.
  7. You can also cook in the cooker upto 2 whistles.
  8. My mom used to discard the water in which she cooked the beans ,as cluster beans sometimes have a bitter taste.
  9. Also while cooking some recipes of cluster beans we add tomatoes to reduce the bitterness.
  10. Cluster beans is prepared in most of the auspicious occasion of Maharashtrian.

1. Very rich in dietary fibre, cluster bean offers heart health benefits. It also helps in maintaining a well digestive system.
2. It also contains Vitamin C that makes bones and teeth stronger.
3. The amount of folic acid content is essential for pregnant women.
