Chicken in fried onion paste

CHICKEN COOKED IN FRIED ONION PASTE.

INGREDIENTS

  • Chicken – 500 gms
  • Potato – 1 big
  • Onion – 2
  • Tomato – 1big
  • Ginger garlic paste – ½ tbsp
  • Chilli pwdr – 2 tsp or as per taste
  • Coriander pwdr – 2 tsp
  • Turmeric pwdr – ¼ tsp
  • Garam masala – 1 tsp
  • Salt to taste
  • Oil – 1 tbsp
  • Oil to fry the onions

PREPARATION.

  1. Clean , wash, rinse and chop the chicken into small pieces . Marinate with turmeric and keep aside for some time.
  2. Finely slice the onion ,and deep fry it till golden brown., drain the excess oil and allow it to cool . Grind it to fine paste by adding little water.
  3. Peel and chop the potato into big cubes.

METHOD

Heat 1 tbsp oil in a pan, add ginger garlic paste and fry till raw smell leaves.

Add tomatoes and fry till oil separates .

Add red chilli pwdr + turmeric + coriander pwdr + garam masala and fry for few seconds.

Add the onion paste and mix well.

Add  the potato + chicken + salt and mix well.

Cover and cook for 2 minutes for the chicken to sweat on high .[ leave water ]

Lower the flame and mix well.

Sprinkle little water ,cover and cook till the chicken and potatoes are cooked well on medium flame.[ 20 mins ]

Keep stirring in between.

Off the flame and garnish with finely chopped coriander leaves.

NOTES

  1. You can also garnish with kasoori methi and fresh cream .
  2. The gravy has to be thick and oily , not watery.
  3. Chop the potato into big chunks so that the chicken and potato cook together.
  4. Instead of tomato you can add curd.
  5. Potato tastes awesome in this gravy, Y not try the same recipe with just potato, may b next time I will try .
  6. You can marinate the chicken with 1 tsp vinegar or ½ tbsp lemon juice.
