Chicken gravy in coconut milk
CHICKEN IN COCONUT MILK
INGREDIENTS
- Chicken with bones – 250 gms
- Oil – 1 tbsp
- Few whole garam masala – jeera,saunf ,clove,cardamom ,bayleaves,cinnamom ,pepper,star anise
- Onion – 1
- Tomato – 1
- Ginger garlic paste – ½ tbsp
- Chilli pwdr – 1 ½ tsp or as per taste
- Turmeric pwdr – ¼ tsp
- Coriander pwdr – 3 tsp
- Garam masala – 1 tsp
- Salt to taste
- Coconut milk – 1 or 1 ½ cup
- Curry leaves few
PREPARATION
- Clean ,wash and chop the chicken
- Make a puree of onion+ tomato + ginger garlic paste.
METHOD
Heat oil in a pan , add the whole garam masala and let it splutter .
Add the curry leaves + puree and fry till oil separates .
Add chilli pwdr + turmeric + coriander pwdr + garam masala pwdr and fry till raw smell leaves .
Add the chicken and mix well.
Cover and cook till the chicken sweats .[ leaves water ]
Add 1 cup of water and cook till the chicken gets cooked on medium flame .[ 15 – 20 mins ]
Add the coconut milk and mix well .
Simmer on low flame for few minutes.
Sprinkle the kasoori methi leaves / pwdr , give a quick stir and off the flame.
Serve as side dish.
NOTES
- For gravy always use chicken with bones.
- Don’t make the gravy thin .
- Never overcook the chicken .
