Cluster beans chutney / Gavar cha thecha
CLUSTER BEANS CHUTNEY / GAVAR CHA THECHA
Thecha or kharda is an authentic Maharashtrian recipe made from green chilly or red chilly garlic chutney. It is served with jawari (sorghum) or bajra bhakri (roti).
Here in the same recipe of thecha we are going to try with gavar /guar /cluster beans .
Cluster beans come in the shape of a bean with a slightly bitter taste. The vegetable is rich in Vitamin C, Calcium, Protein, Iron, and Phosphorus.
Cluster beans are beneficial for cardio health, great for diabetes, help make bone strong, better blood circulation, good during pregnancy, manage blood pressure.
Cluster beans are good for diabetics as they have the highest fibre content among all vegetables which in turn prevents a rapid rise in blood sugar levels after a meal.
INGREDIENTS
- 1 cup cluster beans
- 3 or 4 green chilli or as per taste green chillies
- 8 or 10 garlic
- Salt as per taste
- Oil – 1 tsp + 1 tbsp
- ¼ roasted peanuts [skinless]
- ½ tsp jeera

METHOD
Heat 2 tsp oil in a pan and add the beans .
Stir fry for 3 to 4 mins .
Add green chilli , garlic, peanut and jeera and give a nice mix .
Stir fry for 2 mins .
Once it is done, turn off the heat and let it get cool
Add salt and grind into coarse mixture . [ you can use a stone pestle ]
Again heat 1 tbsp oil in the same pan .
Add your ground mixture and stir fry for 2 mins .
Gavar thecha is ready to serve . Goes well with bhakri .
You can refrigerate and use for few days.
NOTES
- Adjust green chilli as per taste. I have added less .
- We can add lemon juice in the end.
- While grinding add ½ cup of coriander leaves for more flavour.
- Instead of peanuts we can use roasted sesame [ white til ]
