Eggless Blackforest cake recipe
EGGLESS BLACKFOREST CAKE
PREPARARTION.
Preheat the oven at 180* [convection mode]
Grease the baking pan first with butter then dust it with maida.
FOR THE CAKE BASE
INGREDIENTS
- 1 cup [200gms] – maida
- Cocoa powder – 2tsp
- Chocolate powder – 2 tsp
- Milk – 1/2 cup
- Water -1/2cup
- 200ml – milkmaid
- Baking soda -1/2 tsp
- Baking powde r-1tsp
- Butter – 50gms
METHOD
Sieve together maida, baking powder, baking soda, cocoa powder, chocolate powder 3 times.
In a big bowl beat butter , add milk, water, milkmaid and beat it together.
Add the maida mixture in it and mix the batter well for 5 min with a wire whisk to a ribbon consistency.
Pour the batter in the pan and pat the pan well for even spreading.
Bake the cake for 20-30 mins.
Keep checking after 15 mins.
Remove the cake and allow it to cool completely .
FOR THE WHIPPING CREAM
INGREDIENTS
- Tropolite cream /Richs – 2 cup
- Vanilla essence – 1 tsp
- Half bowl of ice cubes
- Electric beater [compulsory]
METHOD
In a wide bowl take the ice cubes.
Place another bowl with whipping cream over it.
Beat for 3 mins till it becomes thick.
Mix in the essence. Beat again for 3 – 4 mins till soft peaks form.
Freeze it for 30 mins. [ Don’t over beat the cream it will lead to cracking while applying]
FOR THE SUGAR SYRUP
INGREDIENTS
- Water – 1/4 cup
- Sugar – 1/4 cup
- Vanilla essence – 1/2 tsp
METHOD
Boil sugar + water for few seconds to make a thin syrup.
Once it cools ,add the essence and mix well.
Cut the the cake horizontally into 2 thin cakes.
Cut and remove the irregular parts so that the top and bottom sides are flat.
Sprinkle the sugar syrup all over the cake [it should not become soggy or wet]
FOR DECORATION :- cherries, chocolate shave or shredded/grated chocolate,sprinklers[optional]
ASSEMBLING THE CAKE
Apply the cream of 1 inch thickness on one side of the cake piece.
Keep the other piece of cake over it.
Now cover the complete cake with the cream.
Using the star mould in the piping bag make small small circles.
Place cherries in the center of the circle.
Cover the sides of cake with scrapped dairymilk or any other dark chocolate.
Keep it in the fridge for 2-3 hours before serving.

NOTES
- In the sugar syrup you can mix thums-up or rum.
- I used brandy to give it a kick.????
- Instead of water you can use pepsi.
- While applying cream in the center you can add chopped cherries.
- I gave it a twist I applied strawberry flavoured cream in the center.
- You can also decorate by using sprinklers.
- This is 2 layer,you can double the quantity and make of 3 layers.
