Mango phirni
MANGO PHIRNI
Kheer or Kheeri or Payesh, Payasam or Phirni a type of pudding from the Indian subcontinent, made by boiling milk, sugar, and rice.
Mango Phirni is a mango twist on a classic Indian dessert Phirni. It is a rice pudding made using rice and flavored with mango puree.
Phirni is made from ground rice, while Rice Kheer is made from whole rice grains. A good quality basmati rice is the preferred rice to make both firni as well as rice kheer. … Phirni is always eaten chilled .The dish is rich in Vitamin A and calcium, which keep the body and bones healthy. Phirni helps get rid of the burning sensation in the stomach when it is upset. The proteins and calcium in phirni can provide energy to your kid all day long. The dish is a wholesome addition to your toddler’s diet.
INGREDIENTS
- Basmati rice – 2 ½ tbsp
- Full cream Milk – ½ litre
- Sugar – 3 or 4 tbsp or as per taste [instead of sugar you can use condensed milk ]
- Cardamom pwdr – ¼ tsp
- Thick mango puree – ¼ cup
PREPARATION
Clean , wash , rinse and soak the rice for 20 – 30 mins.
Drain the excess water and grind it to coarse consistency like rawa [ no need to add water while grinding but if required add 1 tbsp of water ]
Peel and chop the mango and blend it to a fine puree. Strain it if required.
METHOD
Bring the milk to a boil in a heavy bottom pan.
Once the milk starts boiling ,lower the flame and add the rice paste .
Mix well and cook for 10 mins by stirring in between.
After 10 minutes check if the rice is cooked [soft ] , add sugar + cardamom pwdr .
Stir and cook for 2 more minutes till th phirni thickens.
Off the flame , and allow it cool.
Once it cools add the mango puree and mix well .
Pour in serving bowls and refrigerate for minimum 1 hr .
Serve chilled.
NOTES
- You can add condensed milk also ,then you have to reduce the sugar.
- It has to be served in small earthern bowls.
- Use alphonso or kesar mango
- But you can also add few saffron strands soaked in milk.
- You can also add soaked , peeled and sliced almonds or pista .
- You can garnish with saffron or mango pieces .
- You can give a variation by adding 2 tbsp of rose syrup to get rose phirni .
