Fried mint / pudhina chutney recipe
FRIED MINT CHUTNEY / PUDINA CHUTNEY
INGREDIENTS
- Mint leaves – 4 cups
- Coriander leaves – 1 cup [optional ]
- Shallots / onion chopped – 1/2 cup
- Garlic -2 or 3 clove
- Tamarind – 1 inch
- Dry Red chilli – 4 or as per taste
- Freshly grated coconut – 1/4 cup
- Salt to taste
- Oil – 1 tsp
- Jaggery – 1 tsp
METHOD
Clean the leaves and soak in water for sometime so that the soil particles loosen.
Wash and drain the excess water .
Heat 1 tsp oil and add the red chilli .
Fry for sew seconds and add onions and fry till translucent.
Add the leaves and stir fry till the leaves reduce and water evaporates and you get a nice aroma of mint.
Now add the jaggery + garlic +tamarind + coconut .
No need to fry – just mix well and off the flame .
Allow it to cool and transfer to the mixie jar .
Add salt and blend it into a coarse paste by adding few tbsp water.
Serve it with hot steamed rice /dosa / idli etc ..
NOTES
- Add chilli , jaggery and tamarind as per your taste.
- Taste good when grinded on a grinding stone .
- I have not fried the garlic ,as I like the raw taste of it – you can fry it with the onion .
