Mutton gravy southindian style
MUTTON SUKKHA RECIPE IN SOUTHINDIAN STYLE
INGREDIENTS
- Mutton – ½ kg
- Onion – 1
- Tomato – 1
- Ginger garlic paste – 1 tbsp
- Chilli pwdr – 1 tsp or as per taste
- Turmeric pwdr – ½ tsp
- Coriander pwdr – 3 tsp
- Garam masala – 1/2 tsp
- Few whole garam masala
- Salt to taste
- Freshly grated coconut – ½ cup
- Fennel seeds – 2 tsp.
- Oil – 2 tbsp
- Finely chopped coriander leaves for garnish
PREPARATION
Clean and wash the mutton .Pressure cook till done .5-6 whistles depending upon the quality of meat.
Roast the coconut + fennel seeds till golden brown .cool it and grind it.
METHOD
Heat oil in a pan.
Add whole garam masala let it splutter.
Add the onion paste ,fry till oil separates.
Add chilli pwdr + coriander pwdr + turmeric pwdr + garam masala pwdr .
Fry till raw smell leaves .
Add the cooked mutton and mix well till the mutton gets coated with the masala..
Adjust water as per the consistency you want. [it should be thick]
Adjust salt and cook for 2 minutes .
Add the grounded coconut and mix well.
Simmer for 2 – 3 mins .
Off the flame and garnish with coriander leaves.
Goes well with hot rice.
NOTES
- Soak the meat in water for 10 -15 minutes then squeeze and remove the excess water, by doing so you will not get the raw smell of meat as the complete blood gets drained off.
- I have actually used boneless mutton.
- Don’t make it watery
- It has to be thick.
- You can add potatoes.
- Cooking time depends on the quality of meat .
- I buy the thigh portion and while chopping tell the butcher to chop into chanaboti [small pieces]
- Don’t add more water as the meat releases lot of water while cooking.
- Instead of pressure cooking the mutton first ,you can do the whole process in cooker directly.
- Masalas can be adjusted as per your taste.
- While buying mutton don’t buy meat of the old goat.
- Buy meat of young goat which is pink and has a firm texture.
- Mutton is a good source of zinc and iron that can be easily absorbed by human body. Zinc and iron is important for the formation of red blood cells, growth and development of a healthy immune system.
