Sweet jaggery lapsi recipe
DALIYA / DALIA / BROKEN WHEAT/ LAPSI / BULGUR SWEET PORRIDGE COOKED IN JAGGERY
INGREDIENTS
- Daliya – ½ cup
- Jaggery / gur – ½ cup [as per the sweetness you want]
- Cardamom pwdr – 1/2 tsp
- Roasted broken cashew nuts – ¼ cup
- Water – 2 cup
- Ghee – 2 or 3 tbsp
PREPARATION
- In a pan mix jaggery and 2 cups of water, boil till jaggery melts.
- Strain to remove the impurities and keep it aside.
Method
Heat ghee in the cooker.
Add the daliya fry till it gets completely coated with the ghee and turns golden brown
Slowly add the syrup and pressure cook .[ 4 – 5 whistles]
Once the cooker cools down remove the cooked daliya in a pan .
Add the roasted cashew and cardamom pwdr and mix well,
Serve it hot or cold
NOTES
- Lapsi takes time to cook. thats why used cooker. If after 5 whistles its not cooked you can add little warm water and cook again.
- If you want bit loose texture then increase the water .
- Don’t over cook.
- You can add warm water if it becomes dry.
- You can also add raisins /almonds.
- Jaggery can be replaced with sugar.
- More the ghee better the taste.
- You can also add fried coconut bits.
- With cardamom pwdr , a pinch of nutmeg can also be added for flavour.
- You can also add coconut milk and make thin South Indian payasam
