Beetroot cutlet recipe

                                                                                     BEETROOT CUTLET

 Beets are delicious and versatile, fitting well into a healthy and balanced diet.

Packed with essential nutrients, beetroots are a great source of fiber, folate (vitamin B9), manganese, potassium, iron, and vitamin C.  Beetroots and beetroot juice have been associated with numerous health benefits, including improved blood flow, lower blood pressure, and increased exercise performance.

INGREDIENTS

  • Beetroot grated – 2 cup
  • Boiled mashed potato – 2 cup
  • Ginger + garlic + green chilli paste – 2 or 3 tsp
  • Fresh Bread – 3 slices
  • Chaat masala pwdr – ½ tsp
  • Garam masala – ½ tsp
  • Jeera pwdr – 1/2 tsp
  • Salt as per taste
  • Finely chopped coriander leaves – ½ cup
  • Oil for shallow or deep fry or pan fry

PREPARATION –

  1. Peel the skin and grate the beetroot. Squeeze off the extra juice from it.[ SQUEEZE IT WELL, THERE SHOULD NO MOISTURE ] Don’t discard the juice , use it in soup or to make chapati dough or any batter .
  2. Pressure cook the potato. Peel and mash it.
  3. Blend the bread slices and make a coarse powder .

METHOD

In a big plate mix the mashed potato + grated beetroot + chaat masala + garam masala + jeera pwdr + coriander leaves + salt + blended bread slices.

Mix well with hand and make a stiff dough.

Divide into equal same size balls.

Give it any shape of your wish round ,oval, rectangle, heart etc. [for flat edges just press it inbetween  your palms and then roll it on the kitchen platform]

Keep it in the fridge for minimum 30 mins or an hr or more if time permits.

Either shallow fry or deep fry on medium flame till it becomes crispy.

Be quick , dont fry for a long time else the colour will become very dark .

Serve hot with green chutney ,sweet chutney ,any dips or sauce

NOTES

  1. You can also add finely chopped onions.
  2. If the dough is loose you can increase the bread quantity.
  3. You can also add paneer, boiled peas, corn ,grated carrot etc.
  4. Masalas and spices can be adjusted as per your taste.
  5. You can also fry it coating with corn flour / maida slurry and bread crumbs.
