SWEET JAGGERY DOSA SURNOLI RECIPE

Surnoli is a kind of Pancake popular among the Konkani community. They have a puffy texture with holes , mild sweetness and yellow in colour . 

 It is a part of the Saraswat cuisine and is quite a popular breakfast in Goa, Mangalore and other such regions 

INGREDIENTS

  • Idli rice – 1 cup
  • Methi seeds – ½ tsp
  • Poha – ½ cup
  • Freshly grated coconut – ½ cup
  • Jaggery – ½ cup
  • Curd – ½ cup
  • Turmeric – ½ tsp
  • Salt – ¼ tsp
  • Eno – ½ tsp [ optional – it makes the dosas very light ]

METHOD

Wash and soak the rice  +  poha and methi seeds for 4 to 5 hrs .

Drain the water and grind it with jaggery + coconut + curd + turmeric + salt .

Grind into a smooth pouring consistency like dosa batter .Not very thin or very thick.

Transfer the batter to a bowl and beat the batter well with clean hands for 2 to 3 mins.

Let the batter ferment for 8 to 10 hrs or over night .

After fermentation add eno and mix the batter well .

Heat a flat pan on medium flame.

Pour a ladle of batter , tap the pan so that the batter spreads itself Note – don’t spread the batter with ladle .

Once you see bubbles appearing all over , cover with a lid.

Cover and cook for 1 to 2 mins on low flame till th dosa is cooked and porous.

We don’t have to flip and cook .Be careful that the bottom of the dosa doesn’t burn .

We can have these dosas plain or with white butter /pickle/chutney or any side accompaniments.
