FLUFFY MOIST SCRAMBLED EGGS

INGREDIENTS
- 4 large eggs
- 1 tbsp whole milk / water
- Salt to taste
- Pepper as needed
- Nonstick pan
- 1 tbsp Oil / olive oil / butter

Break the eggs in a bowl. [ you can avoid the yolk if you want ]
Add salt + milk .
Beat the egg well using a whisk / fork .
Heat a non stick pan.
Add butter / oil and spread everywhere.
Pour the beaten egg .
Keep the heat on medium/medium low. [ don’t cook on high – if the pan is too hot the eggs will cook too quickly and become rubbery]
Using a spatula begin dragging the cooked outer edges in the center of the pan .Uncooked eggs will move towards the area you just dragged back.
They thicken and dry out very quickly toward the end, be quick .
Keep repeating the process of dragging.
Cooked scrambled eggs will gather in the center of the pan.
Once the complete egg batter is scrambled, stir and cook for a min ,so that it is evenly cooked.
Off the flame immediately once done.
Don’t overcook.
Perfectly cooked scrambled eggs are moist [ not runny ] , with no crisp or brown colour.
Serve immediately .
NOTES
- Some like their scrambled eggs moist and some like them dry. The longer they cook, the drier they become. Either way, use low heat so the texture remains soft and creamy.
- We can add more ingredients to this like mushroom / chicken / onion etc
- We can add cheese also .
