Paneer Bhurji is a popular North Indian breakfast recipe . Easy, healthy and quick paneer dish.

Paneer  is a fresh cheese common in the Indian subcontinent. It is an unaged, non-melting soft cheese made by curdling milk with a fruit- or vegetable-derived acid, such as lemon juice. Its acid-set form, (cheese curd) before pressing, is called chhena.

Green paneer burji / paneer burji in green masala recipe

INGREDIENTS

  • Freshly made crumbled paneer from 1 litre milk
  • Oil – 2 tbsp
  • Onion finely chopped – 2
  • Boiled or frozen green peas – ½ cup
  • Finely chopped capsicum – 1 [ optional ]
  • Coriander leaves – 2 cup
  • Green chilli – 4 or as per taste
  • Ginger garlic paste – 2 tsp
  • Chaat masala – ¼ tsp
  • Jeera pwdr – ¼ tsp
  • Garam masala pwdr – ½ tsp OR 1 tsp kitchen king masala
  • Turmeric – 1/8 tsp
  • Sugar – ¼ tsp
  • Coriander pwdr – 1 tsp
  • Lemon juice – 1 tbsp
  • Salt
  • Kasoori methi – 1 tsp [ optional ]

PREPARATION

  1. Bring 1 litre milk to boil .
  2. As it starts boiling , off the flame .
  3. Add 1 OR 2 tbsp vinegar and give a nice stir till the milk curdles well .
  4. Once the milk completely curdles transfer it through a soup strainer .
  5. Now run some water  under the tap , to remove the taste of vinegar .
  6. Drain the excess water . No need to hang in cloth etc .
  7. Scramble paneer is ready to use .
  8. Grind coriander leaves + masala pwdrs + salt + sugar + ginger garlic paste + green chilli + lemon juice into fine paste . add 1 or 2 tbsp water if required while grinding .

*You can add 1 tsp kasoori methi while grinding .

METHOD

Heat oil in a pan .

Add onions and stir fry till light brown .

Now if you are adding capsicum , add capsicum and stir fry for a min  .

Add the green masala and stir fry till oil separates .

Add green peas and stir fry for 2 mins.

Add 3 or 4 tbsp water and mix well.

Once the mixture comes to a boil add the paneer and give a nice mix .

Check the taste and adjust if required .

Simmer on low flame for a minute and off the flame.

Garnish with coriander leaves .

Serve hot with chapatti roti /pav / bread etc.

Drizzle few drops of lemon juice while eating if required .
