GREEN PANEER BURJI / PANEER BURJI IN GREEN MASALA [ Paneer Bhurji – scrambled Indian cottage cheese ]

Paneer is a fresh cheese common in the Indian subcontinent. It is an unaged, non-melting soft cheese made by curdling milk with a fruit- or vegetable-derived acid, such as lemon juice. Its acid-set form, (cheese curd) before pressing, is called chhena.

INGREDIENTS
- Freshly made crumbled paneer from 1 litre milk
- Oil – 2 tbsp
- Onion finely chopped – 2
- Boiled or frozen green peas – ½ cup
- Finely chopped capsicum – 1 [ optional ]
- Coriander leaves – 2 cup
- Green chilli – 4 or as per taste
- Ginger garlic paste – 2 tsp
- Chaat masala – ¼ tsp
- Jeera pwdr – ¼ tsp
- Garam masala pwdr – ½ tsp OR 1 tsp kitchen king masala
- Turmeric – 1/8 tsp
- Sugar – ¼ tsp
- Coriander pwdr – 1 tsp
- Lemon juice – 1 tbsp
- Salt
- Kasoori methi – 1 tsp [ optional ]
HOMEMADE PANEER RECIPE –
PREPARATION
- Bring 1 litre milk to boil .
- As it starts boiling , off the flame .
- Add 1 OR 2 tbsp vinegar and give a nice stir till the milk curdles well .
- Once the milk completely curdles transfer it through a soup strainer .
- Now run some water under the tap , to remove the taste of vinegar .
- Drain the excess water . No need to hang in cloth etc .
- Scramble paneer is ready to use .
- Grind coriander leaves + masala pwdrs + salt + sugar + ginger garlic paste + green chilli + lemon juice into fine paste . add 1 or 2 tbsp water if required while grinding .
*You can add 1 tsp kasoori methi while grinding .

METHOD
Heat oil in a pan .
Add onions and stir fry till light brown .
Now if you are adding capsicum , add capsicum and stir fry for a min .
Add the green masala and stir fry till oil separates .
Add green peas and stir fry for 2 mins.
Add 3 or 4 tbsp water and mix well.
Once the mixture comes to a boil add the paneer and give a nice mix .
Check the taste and adjust if required .
Simmer on low flame for a minute and off the flame.
Garnish with coriander leaves .
Serve hot with chapatti roti /pav / bread etc.
Drizzle few drops of lemon juice while eating if required .
