Harbhara leaves ki sabji
HARBHARA LEAVES KI SABJI RECIPE/CHICKPEA LEAVES STIR FRY
INGREDIENTS
- Harbhara leaves – ¼ kg
- Oil – 1 tbsp
- Mustard seeds – ½ tsp
- Cumin seeds – ¼ tsp
- Asafoetida – ¼ tsp
- Garlic cloves – 4 crushed [is a must]
- Onion – 1 large finely chopped
- Green chillies – 3 chopped
- Freshly grated coconut – 3tbsp
- Salt as per taste
METHOD
Wash strain and finely chop the harbhara leaves.
Heat oil in pan, add the mustard seed + cumin let it crackle.
Add the onion and saute till light brown .
Add the crushed garlic and saute till it turns reddish brown.
Add the asafoetida + green chillies.
Add the harbhara leaves and cook on medium heat till it sweats and complete water is evaporated.
Adjust salt.
Once the leaves shrinks completely add the coconut , mix well and cook for a minute.
NOTES
- You get these leaves in weight and not bunch.
- You can also add potato or green peas or chick pea or moong dal.
- Instead of coconut you can add roasted besan.
- The leaves have to be tender or its difficult to chew it.
- These leaves can be dried and added to gravy just like kasoori methi
- Always add salt after the leaves shrink as the quantity decreases.
