MINT / PUDHINA COCONUT CHUTNEY

INGREDIENTS

  • Coconut freshly grated – 1 cup
  • Fresh mint leaves – 1 cup
  • Turmeric pwdr – ¼ tsp
  • Roasted chana dal / daria dal – 2 tbsp
  • Green chilli – 3 or 4 or as per taste
  • Garlic – 2 cloves
  • Tamarind – a tiny piece
  • Salt to taste
  • Oil – 2 tsp + ½ tsp
  • Mustard seeds + urad dal – 1 tsp
  • Curry leaves – few

PREPARATION

  1. Pluck , clean and rinse the mint leaves.
  2. In a small heat 1 tsp oil and add the leaves .
  3. Saute the leaves till it shrinks completely .
  4. Off the flame ,add turmeric pwdr and  mix well .
MINT / PUDHINA COCONUT CHUTNEY

METHOD

Take coconut + green chilli + tamarind + daria dal + garlic  + salt + mint leaves in a mixie jar and blend into fine paste by adding ¼ cup water .

***Adjust water as per the consistency you want .

Transfer this to a serving bowl .

Now heat 2 tsp oil ,add the mustard seeds + urad and let it crackle .

Add curry leaves ,give a mix and off the flame .

Pour this tempering over the chutney .

Chutney is ready to be served with any South Indian break fast .

NOTES

  1. Instead of garlic ,you can add a small piece of ginger .
  2. Turmeric enhances the colour.
