Onion tomato mint / pudhina chutney
ONION TOMATO MINT CHUTNEY
INGREDIENTS
- Tomato – 2 big
- Onion – 1 big
- Mint leaves chopped – 2 cup
- Red chilli – 4 or 5 or as per taste
- Salt as per taste
- Oil – 1 tbsp
- Mustard seeds + urad dal – 1 tsp
- Curry leaves – few
- *** You can also add a small piece of jaggery and tamarind while grinding .
METHOD
Heat 1 tsp oil in a pan and fry the red chilli , keep aside. [ don’t burn it ]
Add the chopped onions and fry till translucent.
Add tomatoes and fry till it becomes soft. [ don’t over cook it ]
Add mint leaves and fry till it shrinks.
Allow the mixture to cool and grind it together with fried chilli + salt into a
coarse paste.
While grinding you can add 1/2 cup water or avoid it.
Heat 1 tbsp oil in a pan , add mustard seeds + urad dal + curry leaves.
When the dal browns , add the tomato paste and mix well.
Simmer on medium flame for 2 or 3 mins.
Serve with idli , dosa chapatti , hot rice or as a side
dish .
NOTES
1. Instead of mint leaves try coriander leaves or curry leaves – Tomatoonion coriander chutney recipe
2. Use shallots for more flavour.
3. You can also add garlic .
4. If you grind without water ,you can refrigerate
for 2 days and use.
