Pizza without yeast,without oven

  PIZZA BASE  WITHOUT YEAST , WITHOUT OVEN  [ KADAI PIZZA ]

KADAI PIZZA

INGREDIENTS FOR DOUGH

  • Maida flour – 1 cup
  • Baking pwdr – ½ tsp
  • Baking soda – ½ tsp
  • Milk – 2 tbsp
  • Sour Curd – 1/2 cup or as as required for kneading [not very sour ]
  • Salt  to taste
  • sugar – 1 tsp
  • Big pan / kadai with lid and a wire stand as shown in image

PREPARATION

  1. Take maida + baking pwdr + baking salt + salt and mix well. Sieve it 2 times .
  2. Take it in a big plate, add milk + curd + sugar and mix well.
  3. Knead it into a  sticky soft dough . [not tight ]
  4. Cover and keep aside for some time . [ you can use it directly also ]

METHOD

Again knead the dough for sometime and divide it into equal portion. [ bigger than parathas ]

Roll each portion into smooth balls.

Roll a thick round circle ,by dusting flour .

KEEP THE PAN FOR PREHEATING  – take a heavy bottom pan and keep it on medium flame .cover it and preheat it for 10 mins .[ if you don’t have heavy bottom pan keep a tava under the pan / kadai ]

INGREDIENTS FOR PIZZA

  • Pizza sauce
  • Sliced onion + capsicum + deseeded tomato
  • Grated cheese
  • Mixed herb /oregano chilli flakes
  • Tomato sauce to serve .
  • Salt + pepper as needed OR any other topping of your choice

METHOD

Take the base ,keep it on a baking tray or cake tin . [ I used a aluminium lid of my pan ]

Make impression with finger leaving little space at the edge.

Prick the base all over with a fork .

Apply pizza sauce all over.

Arrange the toppings .

Sprinkle salt and pepper all over the toppings .

Spread the grated cheese all over .

Brush very little olive oil all over .

Place the stand inside the hot pan in the centre .[ be careful as the pan is hot ]

Reduce the flame to lowest .

Now place the tray with the pizza.

The edge of the tray should not touch the edge of the pan there should be a gap between the pan and tray.

Cover the lid and place some heavy object on it.

Bake it for 12 – 18mins .

Keep checking after 10 mins or the base will burn .

Mine was done by 15 mins with crispy base .

Once done

Remove it and sprinkle oregano / mixed herbs  + chilli flakes.

Serve hot with sauce .

NOTE

  1. We can spread around 1 or 2 cup of sand or salt at the bottom of the pan / kadai..
  2. We can also add chilli flakes and herbs in the dough.
