Potato stir fry recipe
ALOO KI SABJI / POTATO STIR FRY RECIPE.
INGREDIENTS
- Potato – 4 medium
- Onion chopped – 2
- Oil – 1 tbsp
- Jeera + mustard seed – 1 tsp
- Green chilli – 1 chopped
- Curry leaves – few
- Red chilli pwdr – 1 tsp or as per taste
- Turmeric pwdr – ¼ tsp
- Roasted cumin pwdr – ¼ tsp
- Asafoetida – a pinch
- Chaat masala- ½ tsp
- Amchur pwdr – ¼ tsp
- Salt as per taste
- Finely chopped coriander leaves
PREPARATION
Pressure cook the potatoes.Peel and chop it
METHOD
Heat oil in a pan.
Add jeera + mustard seed let it splutter.
Add onions + green chilli + curry leaves and fry till light golden.
Lower the flame and add red chilli pwdr + turmeric pwdr + chaat masala + amchur pwdr + cumin pwdr + asafoetida +salt.
Stir and fry till raw smell leaves .[don’t burn the masalas]
Add the cooked potato and mix well till the potatoes are evenly coated with the masalas.
Cover and cook for 2 minutes and off the flame .
Garnish with coriander leaves.
Serve with chappati .
NOTES
- You can either keep the potatoes as whole cubes or mash it.
- Y not give it a twist by adding Sambar masala.
