CLASSIC CRISPY JEWISH POTATO LATKES

Potato Latkes is a shallow fried or baked potato pancake. The recipe is believed to be of Jewish origin and is a must have on Hanukkah. It is a perfect carbohydrate addition to your breakfast with eggs and some sautéed vegetables. These classic potato pancakes are super crispy on the outside but soft and moist on the inside. Use shredded potatoes for a traditional look.

INGREDIENTS

  • Peeled and grated potato – 2 big
  • Onion grated – 1 medium
  • Maida / wheat flour  – ¼ cup
  • Baking powder – ¼  tsp[ optional ]
  • Egg – 1
  • Salt to taste
  • Pepper pwdr – ½  tsp
  • Oil for frying

METHOD

Take a bowl with egg + flour + salt + pepper pwdr + baking pwdr and mix well .

Keep aside

Grate the potatoes and onion .

Take in a muslin cloth and squeeze of all the excess juice.

Now add this to the flour mixture and mix well.

Heat a flat pan with oil for shallow frying .

Take a small portion of the mixture and flatten it.

Cook till golden and crisp from both sides .

Serve hot with any dips.
