RAW MANGO SEVAI

Eating raw mangoes can help us in many ways. It is rich in vitamin A and vitamin E that enhances one’s hormonal system. It prevents dehydration; raw mango replenishes the reserves of sodium chloride. It cures stomach disorders such as constipation, bloating, indigestion and diarrhoea.

INGREDIENTS

  •  Rice Noodles 1 PKT [ I used Anil brand ]
  • 1 medium size Raw mango [ Not very tangy ]
  • 2 – 3 tbsp Oil / ghee
  • 1 tsp Mustard
  • 1 tsp  Urad dal
  • 1 tsp Chana dal
  • ¼ cup Peanut
  • 1 Red Chilli broken
  • Curry Leaves
  • ½  tsp Haldi /turmeric
  • 2 or 3 Green Chillies
  • Grated ginger – 1 tsp
  • Asafoetida – a pinch
  • 2 or 3 tbsp coriander leaves
  • Sugar / jaggery – 1 tsp
  • Salt to taste

METHOD

Boil  water + salt in a broad pan.

When water starts boiling , add noodles and give a mix .

Cook till it is done , don’t overcook the sevai . [ it hardly takes 11/2 or 2 minutes ]

Transfer the cooked sevai to a strainer to drain the hot water.

Run cold water all over under the tap and drizzle  a tsp of oil all over , so that noodles do not stick. Spread it and allow to cool .

Wash the raw mango , peel it and grate it .

Heat oil in a pan .

Add mustard ,let it crackle .

Add chana dal + urad dal and fry till light brown on medium flame .

Add red chilli + curry leaves + grated ginger + green chilli and fry for few seconds.

Add turmeric pwdr + asafoetida and give a mix  .

Add salt + sugar and give a mix .

Add grated mango immediately, mix and stir fry for 4 to 5  mins.

Add the cooked sevai  and mix well .

Cook for 1 or 2 mins on low flame and off the flame .

Garnish with coriander leaves .

Tangy Raw mango sevai is ready to serve. Enjoy at room temperature .

NOTES

  1. You can finally garnish with 2 OR 3 tbsp of freshly grated coconut .
  2. Cooking instant rice noodles is very easy. But take care not to overcook 
  3. You can also add cashew .
  4. You can use any sevai ,I have used anil brand .
  5. It is very similar to lemon sevai .
  6. Adjust quantity of mango as per the sourness of the mango.
  7. I also added sugar / jaggery  to get a khatta , meetha and teekha taste.
  8. Add chilly as per the sourness of the mangoes.
  9. You can replace sevai with cooked rice and make Mango rice.
