Roasted bell pepper salad
ROASTED BELL PEPPER SALAD
INGREDIENTS
- Yellow bell pepper – 1
- Red bell pepper – 1
- Onion – 1
- Garlic – 2
- Olive oil – 1 tbsp
- Salt as per taste
- Pepper pwdr as per taste
- Lemon juice – 1 tbsp or as per taste
- Finely chopped coriander leaves
PREPARATION
- Roast the bell pepper directly over the fire, till black blisters appear all over it.
- Remove from fire .Cover and keep for 5 – 10 mins to sweat , once cooled peel the blackened skin with hands or scrape off with a knife.
- Slice it into thin strips.
METHOD
Heat the oil in a pan .
Add onion + chopped garlic and fry till translucent.[don’t soften it more, it should be crunchy]
Off the flame.
Take all the ingredients in a bowl and mix well with clean hands.
Drizzle the lemon juice and mix well.
Refrigerate for minimum 2 hrs and serve.
NOTES
I have also added fried paneer and boiled corn.
