Spring onion pulao
SPRING ONION RICE / PULAO / FRIED RICE
INGREDIENTS
- Spring onion + greens chopped finely – 2 cup
- Cooked rice – 2 cup
- Oil + ghee – 1 tbsp
- Jeera – 1 tsp
- Ginger + garlic + green chilli paste – 1 tbsp
- Turmeric pwdr – ¼ tsp [optional]
- Garam masala pwdr – ½ tsp
- Salt to taste
PREPARATION
Clean, wash and soak the rice for 20 mins.
Cook with salt and keep aside .[ it should not be overcooked ,should be grainy]
METHOD
Heat oil + ghee ,add jeera and fry till it crackles.
Add ginger + garlic + green chilli paste and fry till raw smell leaves .
Add the chopped spring onions and fry till translucent .
Add garam masala pwdr + turmeric pwdr + salt, mix well and fry for few seconds .
Add the cooked rice and mix well .
Stir and cook for a minute till it is coated well.
Serve with any side dish.
NOTES
- I have used leftover rice.
- You can also add finely chopped coriander leaves with onions.
- Instead of green chilli ,you can use red chilli pwdr.
- You can avoid turmeric.
