                                      SPRING ONION RICE / PULAO / FRIED RICE

SPRING ONION PULAO

INGREDIENTS

  • Spring onion + greens chopped finely – 2 cup
  • Cooked rice – 2 cup
  • Oil + ghee – 1 tbsp
  • Jeera – 1 tsp
  • Ginger + garlic + green chilli paste – 1 tbsp
  • Turmeric pwdr – ¼ tsp [optional]
  • Garam masala pwdr – ½ tsp
  • Salt to taste

PREPARATION

Clean, wash and soak the rice for 20 mins.

Cook with salt and keep aside .[ it should not be overcooked ,should be grainy]

METHOD

Heat oil + ghee ,add jeera and fry till it crackles.

Add ginger + garlic + green chilli paste and fry till raw smell leaves .

Add the chopped spring onions  and fry till translucent .

Add garam masala pwdr + turmeric pwdr + salt, mix well and fry for few seconds .

Add the cooked rice and mix well .

Stir and cook for a minute till it is coated well.

Serve with any side dish.

NOTES

  1. I have used leftover rice.
  2. You can also add finely chopped coriander leaves with onions.
  3. Instead of green chilli ,you can use red chilli pwdr.
  4. You can avoid turmeric.
