Dal gosht in southindian style
DAL GOSHT / MUTTON DAL / MUTTON SAMBAR / MUTTON BONES COOKED WITH DAL IN SOUTHINDIAN STYLE
INGREDIENTS
- Mutton bones – ½ kg
- Tuvar dal – ½ cup
- Onion – 1 big
- Tomato -1
- Ginger garlic paste – 1 tbsp
- Sambar pwdr – 2 tsp
- Chilli pwdr – 1 tsp or as per taste
- Coriander – 2 tsp
- Turmeric pwdr – 1 tsp
- Freshly grated coconut – ¼ cup
- Fennel seeds [saunf] – 2 tsp
- Salt as per taste
- Oil – 1 tbsp
- Few whole garam masala
- Curry leaves – few
- Finely chopped coriander leaves for garnish
PREPARATION
Cut ,clean and wash the mutton bones.
Wash the dal .
Pressure cook dal + mutton bones + little turmeric .Over cook it so that the bones become little soft.[ 7-8 whistles].
Make a fine paste of onion + tomato + ginger garlic paste.
Roast the coconut with fennel seeds [saunf] till golden colour.Cool it and grind it into a fine pwdr or paste.
METHOD
Heat oil in a pan .
Add the whole garam masala ,let it splutter.
Add the onion paste and fry till oil separates .
Add turmeric + chilli pwdr + coriander pwdr + sambar pwdr and fry till raw smell leaves.
Adjust salt .
Add the coconut paste and fry for 1 minute.
Add the cooked dal.
Adjust water as per the consistency you want.[it thickens after cooling]
Simmer it for few minutes
Off the flame garnish with curry leaves and coriander leaves.
NOTES
- You can also use any other dals.
- Instead of sambar masalapwdr, use garam masala pwdr.
- Temper the gravy with mustard seeds + shallots +curry leaves in coconut oil for more flavour.
- You can also add few sambar veges.
