SINDHI MUTTON KHEEMA RECIPE

 INGREDIENTS

  • Mutton kheema – 500 grms [ don’t buy machine minced ]
  • MARINATION MASALA – 4 tbsp curd + 1 tsp ginger garlic paste + little salt  + 1 tsp chilli pwdr  + ½ tsp jeera pwdr + 1 tsp kasoori methi + 1 tsp coriander pwdr + ½ tsp turmeric
  • Onion  finely chopped – 4 big
  • Oil – 1 tbsp
  • Ghee – 4 tbsp
  • Whole garam masala –  1bay leaf + 1 inch cinnamon + 2 green cardamom + 1 black cardamom + 2 clove
  • Ginger garlic paste – 1 tbsp
  • Tomato puree or finely chopped – 3
  • Coriander pwdr – 2 tsp
  • Red chilli pwdr – 2  tsp or as per taste
  • Turmeric – ¼ tsp
  • Garam masala pwdr – ½  tsp
  • Salt to taste
  • Kasoori methi – 1 tsp
  • Coriander leaves for garnish
  • Green chilli slit – 2

METHOD

Clean , wash , rinse and drain the complete water from the kheema .

Add all the marination ingredients , mix well and keep aside for minimum 1 hr or overnight in fridge

Heat oil + ghee in a cooker .

Add whole garam masala and let it splutter .

Add onion and stir fry till golden .

Add ginger garlic paste  paste and stir fry till raw smell leaves .

Add tomato and stir fry till oil separates .

Add masala powders , mix well  and stir fry for few seconds .

Add marinated meat and mix well .

Stir and cook till the mutton sweats

Now stir and cook till complete  water evaporates

Add 3/4 or 1 cup water + salt as needed and mix well .

Pressure cook upto 4 to 5 whistle OR bring 1whistle on medium flame ,then lower the flame to lowest and cook for 10 mins .

Allow the pressure to release .

Add green chilli + garam masala pwdr + kasoori methi + coriander leaves and give a nice mix .

Once done serve hot with pav + onion rings + lemon.
