HOW TO MAKE MINT LEAVES POWDER / USES OF MINT LEAVES POWDER / PUDHINA POWDER
The mint powder is prepared from dried mint leaves.The mint leaf, fresh or dried, is the culinary source of mint.
Dry Mint Powder is good for health as it bolsters smooth digestion. In the ancient times, this powder was also used to clean and whiten the teeth. Moreover, it also cured stomach ache and chest pain.
Mint powder can be used on cooked dishes such as dal and curries. As heat diminishes their flavor quickly, mint powders are often used raw or added to the dish right before serving. In Indian and Central Asian recipes, mint powders can be used to make cool refershing drinks like mintade or jaljeera.
Mint powders are considered an aid to the digestive system. It is an appetite stimulant and aids in the secretion of gastric juices. Mint was originally used as a medicinal herb to treat stomach ache and chest pains, and it is commonly used in the form of tea as a home remedy to help alleviate stomach pain

METHOD
Take 1 bunch of fresh mint leaves .
Pluck the leaves .
Wash it thoroughly .
Transfer to a colander /sieve for excess water to drain away .
Once excess water drains out , spread on a kitchen napkin / plate .
Sundry till it becomes crisp . It may take 1 or 2 days , depending on the weather .
Avoid drying in direct sunlight as it will affect the bright green colour of the leaves.
You can also dry it under the fan .
When the leaves become crisp transfer to the mixie jar .
Grind into fine powder .
Store it in an airtight container.
It stays fresh for 6 months at room temperature.
You can also refrigerate and use .
One bunch of leaves gives roughly ¼ cup of mint powder.
In absence of sunlight or drying facility , rainy season , then spread it in microwave tray. Microwave it on high power, for 2-3 minutes till crisp , keep turning them around a couple of times in between in agap of 30 seconds .
OR
Just drain excess water , dry on a cloth under the fan for a day . Then dry roast on a heavy bottom pan on low flame till crisp
USES OF MINT LEAVES POWDER
Add in raitas, marinadeS for grilling meat or vegetables, for making pudina lachha parathas , salad dressings use it instead of kasoori methi in gravies, CHUTNEY , PESTO .
sprinkled over soups, salads, cooked vegetables, fresh fruit or yogurt.
Add to lemonades, mojitos and spicy buttermilk (chaas).
Mint powder are used in teas, beverages, jellies, syrups, candies, and ice creams.
MINT TEA – just 1 tsp in 1 cup hot water + honey .
The same process can be used to prepare dried basil, dried oregano, dried coriander, dried thyme or any such dried herbs. It is a good way to preserve large packets of fresh herbs when in season or if the supermarket doesn’t sell small bunches of the fresh herb.
