Dragon chicken

DRAGON CHICKEN RECIPE / INDO CHINESE STARTER RECIPE / RESTAURANT STYLE DRAGON CHICKEN /  CHICKEN STARTER RECIPE

This dish, made of chicken and not dragons, is probably named thus because of its red colour, like a fire-breathing chicken…

Dragon Chicken is easy to make and can be cooked in 45 minutes. Dragon Chicken is best to eat as an appetizer..

This we had in a restaurant in Tamil Nadu – SAV highway hotel [ kaval kinaru ] This dish tempted me to make this recipe and yes I could do justice to it .

It is a popular Indo-Chinese chicken recipe. Thin long strips of chicken breast are marinated  andthen batter fried. It is then tossed with cashews, veggies and  sauces. Serve it as a starter or side dish with fried rice or noodles .

INGREDIENTS

  • Boneless chicken strips – 250 gms marinated with little salt + ½ tsp pepper
  • All purpose flour/ maida – ¼ cup
  • Cornflour – 2 tbsp
  • Baking powder – ½  tsp
  • Egg – 1
  • Water – approximately ¼ cup
  • Garlic  minced – 2 tbsp
  • Dried red chillies – 4
  • Onion sliced- 1 small
  • Cashew nuts  – 20 nos [ split it ]
  • Capsicum thinly sliced – 1
  • Red Chilli sauce – 2 tbsp
  • Soya sauce – 1 tbsp
  • Tomato sauce – 3 tbsp
  • Sweet chilli sauce – 2 tbsp [ optional ]
  • Water – 6 tbsp
  • Salt to taste
  • Sugar – 1 tsp
  • White sesame seeds as needed
  • Finely chopped spring onion greens
  • Oil- 1 tbsp + oil for deep frying

PREPARATION

  1. Cut the boneless chicken into 2 inch strips.  Add salt + pepper powder and mix well. Set aside for minimum 15 mins or more.
  2. Make a batter of beaten egg + maida + pepper pwdr + baking pwdr + corn flour + food colour + salt
  3. Add the marinated chicken into the batter and mix well.
  4. Heat oil in a deep pan .Add the cashew and fry till golden . remove and keep aside .
  5. Slide in the chicken strips and fry the chicken in small batches till golden and crisp. Takes roughly  around 4-5 mins on medium flame as the chicken is chopped thinly . Drain and keep aside .
  6. Make a mixture of all the sauces + sugar + 6 tbsp water and keep aside.

METHOD

Heat – 1 tbsp

Add the chopped garlic and stir fry for few seconds , colour should no change.

Add  broken dried red chillies and give a stir .

Add the  onion  and stir fry for a min .

Add he capsicum and stir fry for a min .

Add the sauce mixture + salt as needed and mix well.

When it starts bubbling, lower the flame and  add the fried cashews and give a mix .

Add the fried chicken strips and mix well.

Stir and cook for 1 or 2 mins till the sauce is absorbed by the chicken .

Off the flame and garnish with spring onion greens +  white sesame seeds.

 Serve hot.

Note once , you switch off the flame , you can add little honey for more taste .
