CRISPY CHIROTE / FLOWER CHIROTE

Chiroti is a delicacy predominantly served in Karnataka and Maharashtra. It is also famous in parts of Telangana state. Specially in the districts of Nalgonda. Here it is known by the name Pheni/Peni. It is served as a dessert on special occasions such as a festival or a wedding
INGREDIENTS
- Maida – 1 1/2 cup
- Hot oil /ghee – 2 tbsp
- 3 different food colour few drops
- Oil to deep fry
- Corn flour flour – 3 tbsp
- Ghee – 2 tbsp
- Salt – 1/4 tsp
PREPARATION
Take the ghee in a small bowl and beat well .
Mix in the corn flour and make a smooth paste.This is called saata .
METHOD
Heat 2 tbsp oil /ghee .
Take the flour + salt + hot oil in a big plate and start mixing till crumbly .
Slowly add water and knead it into a pliable dough. [ the dough should be tight ]
Cover with damp cloth and keep aside for 10 or 2o minutes or more .
Once again knead it.
Divide the dough into 6 equal portions. [ same size ]
3 balls keep we have to keep white and 3 balls different colour as shown in pic .
Take 1 ball add few drops of green colour ,mix well and beat / pound it with a heavy object .
Repeat same with other 2 balls with different colour .
Roll out orange and red ball separately into thin discs separately by dusting dry maida . [even 6 or 7 will do for more layers ]
After making one disc ,tap it gently with back of rolling pin all over .
Apply the corn flour + ghee paste on top of the disc generously .
Roll it into 2 different logs and keep aside .[cylindrical ]
Now follow the video and repeat the process.
Now gather all the logs as shown in pic .
Roll it gently and make 1 thick log .
Cut the log with a gap of 1/2 inch .
Now take each slice and gently roll it by dusting it with little flour as shown in pic.
Heat oil in a frying pan on medium flame.
Drop in the chiroti ,turn and fry on low to medium flame . [not high flame ]
while frying try splashing hot oil over the chiroti ,just like we do for pooris .
Fry for 3 mins .
Flip and again fry fry for 3 mins
Fry till crisp on all sides.[don’t burn it ]
Remove on absorbent paper and dust icing sugar /powdered sugar all over
Allow it to cool and serve .
Store in airtight container.
VARIATION
- Make syrup from – Sugar – 1 cup + Water – ½ cup. Boil till 1 string consistency .
- Remove the chirote and drop into warm syrup .
- Flip on both sides , remove and let the excess syrup drain off.
NOTES
- For namkeen chirote [ savoury ] add jeera or ajwain or pepper pwdr or kalonji to the dough .No need of sugar syrup .
- Instead of ghee ,we can use vanaspati dalda.
- We can also make plain ones without any colour.
