SWEET SPICY SOUR KARONDA PICKLE RECIPE/INSTANT KARONDA PICKLE

Karonde ki launji (करौंदे की लौंजी) is a sweet, tangy and delicious recipe from North Indian cuisine. This is an easy-to-make recipe.
Karondas are rich in nutrients and provide some of the essential minerals. It is rich in iron, vitamin c, vitamin A, calcium and phosphorus. In Ayurveda, it is used to treat acidity, indigestion and urinary disorders. Karondas are popularly used to make spicy pickle, chutney and jam. Karonda launji is something that you will love for sure.

INGREDIENTS

  • Karonda – 150 grms
  • Oil – 1tbsp
  • Mustard ,Jeera, Crushed Saunf, Kalonji,Methi seeds – 1 tsp
  • Chilli pwdr – 1 tsp
  • Turmeric – 1/4 tsp
  • Salt
  • Sugar or jaggery – 6 to 8 tbsp as per taste

METHOD

Wash and dry the karonda and cut it into two halves and remove the seeds.

Heat oil in a pan and crackle the whole spices .

Add the karonda and mix well.

Stir ,cover and cook for 2 mins.

Open and mix well .

Add chilli pwdr + turmeric + salt and mix well.

Add ½ cup water and mix well.

Cover and cook for 2 to 3 mins till soft. Don’t overcook.

Open and add sugar mix well.

Stir and cook till sugar dissolves completely.

Once done off the flame.

It thickens on cooling .

Completely cool down and store in a glass air tight container up to 30 days in the refrigerator.
Enjoy with roti, paratha, chila etc.
